Summer toddies are a cool and refreshing treat on a lazy afternoon or warm evening.
Toddies are named for the toddy drink in India, created from a drink of the toddy palm, then carried to Scotland by the East India Company as a hot whiskey drink of water, honey, herbs, and spices.
For 8 servings:
Boil 4 cups of water. Add 2-3 tablespoon of spice blend
and cinnamon sticks (to taste) to muslin bag. Steep 10-15
minutes then remove spice bag. Add honey to taste. Add 4 Cups cold water.
Refrigerate overnight or add ice to cool.
Pour in tumblers filled with ice, add up to 2 oz of your
favorite summer alcohol (Dark Rum, Tequila,
Vodka or Gin) to each glass. Stir. Garnish with lime.
Enjoy with or without alcohol.
